Ingredients
4cups (about 2lbs)diced peaches skins removed
2Tablespoonshoney
1Tablespoonfresh lemon juice
1/2teaspooncornstarch
Instructions
Add diced peaches, honey, cornstarch, and lemon juice to a blender and blend until smooth.
Pour in a saucepan, then bring to a simmer for 2-3 minutes over medium heat. Stir often.
Take off heat, and let it cool for 15 minutes.
Pour onto dehydrator trays with no stick sheets or a silicone tray placed on top.
Divide liquid between 2 trays.
Dehydrate at 125ºF for 8-12 hours or until no wet spots remain. The leather can be a little sticky but shouldn't be moist.
Cut each leather into 4 strips, place on parchment paper to fit each strip of fruit leather, then roll, tie with twine, and store in an airtight container.
Makes about 2 trays or 8 fruit leather roll ups.
Notes
Try not to overdry the fruit leather. If you do, the edges will be crisp and not roll well. If that happens don't worry, leave it out until the fruit leather absorbs some of the humidity from the air. This process usually takes 1-3 days.
