Easy Blueberry Lemon Popsicles

These Easy Blueberry Lemon Popsicles are refreshing, refined sugar free, and filled with fruit and yogurt. What makes them even better is they only take about 10 minutes of prep! The hardest part of this recipe will be waiting for the popsicles to freeze.

On a hot summer day these popsicles will rehydrate and revitalize- I’m speaking from experience! I’ve come in from the garden feeling a headache coming on from the sun and heat. Then I eat a blueberry yogurt popsicle and the headache is gone and I suddenly feel more energy.

I researched a bit and found out the reason they make me feel better is they contain natural electrolytes! Blueberries, lemons, a pinch of salt, and the yogurt are all sources of electrolytes.

Pick and use fresh blueberries if they are available. About five years ago, we prepared our soil for blueberry plants and planted both Northern Highbush and Rabbiteye blueberries.

Thankfully, I did my research on blueberry plant spacing because they are getting large and we are getting a great harvest.

I love to make fresh seasonal food and these popsicles are a fantastic way to use fresh blueberries. You can also use frozen blueberries with great results.

Aside from the popsicles, we also love to use our fresh picked blueberries in our sourdough blueberry scones.

Ingredients

Ingredients for blueberry popsicles are on a counter including maple syrup, plain yogurt, blueberries, and lemons.

Lemon Juice: Fresh squeezed lemon juice has the best flavor but you can also use bottled.

Yogurt – Plain yogurt adds the perfect smooth and creamy texture to this snack/dessert. You can substitute coconut, almond, or soy yogurt for a dairy-free popsicle.

Blueberries – Pairs perfect with the lemon juice. Can easily sub out these for any other type of berry (strawberries, blackberries, raspberries, etc)

Salt – More than to enhance the flavor, the salt helps lower the freezing temperature to create a better popsicle texture. Bet you didn’t know that 🙂

Maple Syrup – Balances any tartness from the berries. Maple syrup is a natural alternative to refined, processed sugars.

Easy Blueberry Lemon Popsicles Step by Step Instructions

STEP 1 Add 1/4 cup lemon juice, 2 cups yogurt, 2 cups blueberries, 1/2 cup maple syrup and a pinch of salt to a blender.

The whole ingredients for the blueberry yogurt popsicles are blended to a puree.

STEP 2 Blend until all ingredients are pureed.

The blueberry yogurt mixture is poured into a popsicle mold tray.

STEP 3 Pour into a popsicle mold tray.

Popsicles sticks are being added to the blueberry lemon mixture in the silicone tray.

STEP 4 Add popsicle sticks

The popsicles are placed in the freezer.

STEP 5 Freeze for at least 8 hours.

One blueberry lemon yogurt popsicle.

STEP 6 Remove popsicle tray from freezer and let sit at room temperature for ten minutes. Pull out popsicles and enjoy!

Storage & Supplies

We use silicone popsicle molds with wooden craft sticks at our place. In the freezer, these will last good for up to three months.

However, they last a year or more if the popsicles are removed from the molds and then vacuum sealed. If you or your kids are anything close to normal, these will never last in your freezer that long 🙂

Frequently Asked Questions

Can I make these without yogurt?

Yes! Simply omit the yogurt for one option. If you still want the creaminess, coconut cream works well, also.

Can I feed these to my teething baby?

Yes, these are baby safe. Just make sure you haven’t substituted honey in any part of this recipe. Maple syrup is fine for babies, honey is not!

How do I keep my popsicles from being too ‘icy’?

The ‘icy’ popsicles are partly a result of not incorporating enough fats into the recipe. Dairy creams, coconut cream, almond milk, yogurts are all good options to maintain a creamy, not-too-icy popsicle.

Tips & Tricks

  • Use silicone popsicle trays. They are easier and less hassle than those old plastic tupperware ones our moms used to use.
  • Use frozen fruit to cut down the freezing time significantly.
  • Swap out any fresh or frozen berries in place of blueberries. This recipe is delicious with strawberries, blackberries, blueberries, or raspberries.
  • Want them more creamy? instead of 2 cups yogurt, use 1½ cups of yogurt and a ½ cup of cream.

Equipment

  • 1 Popsicle Mold Tray

Ingredients

  • ¼ cup lemon juice fresh squeezed preferred (about 2 large lemons)
  • 2 cups plain whole milk yogurt
  • 2 cups blueberries
  • ½ cup maple syrup
  • pinch sea salt

Instructions

  • Add all ingredients to a blender.
  • Blend until pureed.
  • Pour into popsicle molds and add sticks.
  • Freeze for at least 8 hours or until fully frozen.
  • When ready to eat, remove from freezer and wait 10 minutes. Then remove from popsicle molds and enjoy!

Notes

  • You can substitute any plain nondairy yogurt instead of regular.
  • For a creamier version, instead of 2 cups yogurt, use 1½ cups of yogurt and a ½ cup of cream.
  • Plain greek yogurt also works great in this recipe!
  • You can use any berry in place of the blueberries. 
  • Both frozen and fresh berries work in this recipe.
  • Feel free to adjust the sugar to taste! You can try a little before freezing and see how you like it.

    I follow your YT channel and your advice and experiences are very important to me in starting new steps in running a household. My family moved from a big city to a smaller place 3 years ag. We created a garden, and we recently got chickens.
    Some of the topics that I would like to know more about are, for example, a more detailed reviews of kitchen appliances. I see you like to use them, but which ones are the most useful to you and for what?
    Then why not make your own chicken feed? Is it better to buy a ready-made mixture?
    I noticed that in several videos you talk about raising chickens for meat (and I also saw a text about slaughtering chickens), but it would be valuable if you could dedicate a video to the volume, with more details about the whole process from start to finish.
    There are many topics where your experience could be valuable, these are just some of my ideas that I’m really interested in right now.
